Breakfast Redux

Mmmm, breakfast for dinner again! I had a hankering for maple syrup this evening so with Jim’s okay (which is laughable, because the boy always wants “griddlecakes”) I made a quick batch of apple cinnamon pancakes. On the side is my version of Waldorf salad. I chopped up a Gala apple, a Bosc pear, and some green grapes, added a healthy dose of raisins and walnuts and mixed it all up with a container of vanilla soy yogurt. No celery or Vegenaise for us. It was a light and refreshing fruit side dish on a hot Arizona day (it was 102 today!). On the side is a glass of orange tangerine juice and the ramkin contains organic Grade A maple syrup.

Another day of packing behind me a several left ahead of us. Not doing to shabby, though. The kitties are being helpful, as they always are. Here’s a picture of Linus helping me today:

I have a Chartreaux who is the same color; I call him my jewlery kitty cause he looks all sparkley when the sun hits him.

Glad to hear the move is going relativly without a hitch. I wonder what you guys are going to do with a moderate clime?? After 102 I’m sure it will be welcome!

Can I move to Portland with you?? I am already sick of the heat, and it has only just begun. Actually, Portland is where I want to move next, hopefully in the next 2 years (although my husband is very resistant to moving…). I went there a year ago and it was fantastic, and we only saw a fraction of the city. My husband didn’t like the rain. Whatever. :-)

Oh, and I love breakfast for dinner!

Linus thanks you, Kristie! He is quite the charmer! His fur is so soft, too, like a cotton puff. Whenever he’s feeling calm enough I like to rub my face into this belly.

I’m certianly going to be in love with the weather, Lady T. The apartment we have set up for us is on a creek and there are bike trails nearby, so buying a new bike (because my current one is crappy and not coming with us) is first on the agenda. I also want to do some kayaking.

Brooke, didn’t you know the eventual plan for all the vegans to move to Portland so we can cecede from the union and create Veganland? Does your husband like beer? They have the most micobreweries in the country and they have a big beerfest every summer. True, it’s rainy there, but the summer is dry and temperate and stunning. Plus the winters aren’t too bad, either. And it’s not like Arizona rain, where it downpours, it’s more like a mist.

OMG, that would be terrible! Thankfully not. We’re having our stuff shipped in those pod things and we’re driving our two cars. So the cats will be seperated between us. Boys against girls! Jim gets Linus and Ravi because Linus, oddly, loves car rides and Ravi will mumify humself in his blanket and remain speechless for the duration of the trip. I get Bindhi because she will be loud and we don’t want her upsetting the boys. Plus I’ll have the hamster, but that’s not really any work. But, it’s always stressful driving with cats, so yes, it’s will be something else!

You cat is beautiful (or is it handsom?). I noticed your apple salad with grapes and currants. This looks exactly like what I am eating right now, but I added broccoli.

I’ll have to read more of your blog to figure out whats up with the move. I’m glad you stopped by to visit my blog.

Thanks, Dori. We haven’t quite pulled out of town yet (Wednesday morning), but we’re neck deep in boxes and our cats are sufficiently spooked. Oh well, they’ll be happy once we get there.
