Okay, folks, I’m doing another giveaway! This time it’s for a lovely sticker from The Secret Society of Vegans . They didn’t have a very large pic for me to post here, so just follow the link. Super cool company.

Ok, here’s what you do. Reply to this posting, just write a comment, and the winner will be randomly drawn. There will actually be 2 winners in this: to be entered you must tell me your favorite kind of quickbread (i.e banana bread… but not banana bread because I already have that). I will use your answers to develop a new quickbread recipe that I will name after the person sumbitting the idea and they will get a free copy of the book when it comes out. Sound like a plan?

So, to recap: reply in the comments with your favorite quickbread or a kind of quickbread you’d like to try (a bread that does not require yeast) and I will randomly pick a winner for the sticker and then intentionally pick a winner for the bread idea. Okay? Okay! The contest will close at midnight on Wednesday July 12th.

My quickbread section is rather lacking, so I need some inspiration. Thanks!

Cranberry/orange/walnut bread

Oh and once I had a quick bread w/ blueberries in it and that was terrific, too.

No Knead Oven Raised Bread - I know it’s not your typical quick bread but for a regular type of bread that’s super fast, this one can’t be beat. I usually use whole wheat (with a little gluten flour to help it rise and be fluffy) and lots of seeds/nuts.

Sunflower seeds with cranberry or blueberry something…

I like maple syrupy-walnut-dried fruit type combos.

Coconut blueberry.

Cinnamon bread! Mmmmmmmmm

And as far as quick breads with nuts in them…many people don’t like nuts mixed in stuff (yeah, I know I’m weird). In your cookbook, if a recipe needs to be altered in order to omit the nuts, will you be including those instructions? If you need a tester, feel free to let me know! :-)

laura, probably you can just leave nuts out. Unless they are a whole bunch ground up, they are not doing anything chemically to the recipe.

Blueberry quick bread, yummy!

Vegan Blueberry Bread

1 C ww flour

1C wheat germ, plus a little to line baking pan

2.5 t baking soda

~.5 C chopped walnuts

1 C fresh or frozen bluberries

1 C +1 T soy milk

5 t apple cider vinegar

1 T maple syrup

2.5 t vanilla extract

Preheat oven to 350.
Combine flour, germ, soda, blueberries and walnuts.

In a separate bowl, combine soy milk, vinegar, syrup and vanilla.

Combine dry and liquid components.

Line a 9″ x 9″ glass cake pan with a thin layer of oil, and then a little wheat germ.

Fold batter into pan.
Bake ~25-30 minutes, or until just brown on top.

Yay, I love giveaways! I haven’t had it in a while but I love chocolate zucchini bread. I also think it would be cool to have blueberry lemon bread (instead of blueberry lemon muffins). Yum!

I love carrot bread (with golden raisens and nuts, optional). My absolute favorite is zuccini bread–that’s fabulous! What a way to go with the summer squash!

I also like mixed berries bread. We use a bag of the frozen mixed berries from Trader Joes to make this warm Sunday morning divinty. Adding coffee-cake like crumbles on top makes this even more sinful–and what a way to sin first thing in the morning. Esp nice for summer!

one of my favorite food combos is dark chocolate and orange… never thought about it in bread form until now. could be really good… i am thinking some kind of orange bread with dark chocolate chips. yummm!

My top favorite is blueberry-molasses

My second favorite is carrot-cardamom-sesame (just love sesame!)

My third favorite is butter-sesame-lemon

I was thinking maybe almond quick bread with a powdered sugar glaze that has some almond extract in it too. I don’t know - that’s all I’ve got!

How about hazelnut cherry bread? I’m thinking dried cherries…

Or my mom used to make an amazing, dense, tart lemon quick bread with lemon glaze, which I haven’t been able to recreate.

OK, how about pecan, cinnamon and possibly sweet potato bread with a rum raisin glaze? Kinda like the bread pudding or pecan pie you get down south.
