A thank you and some not-so-good pictures

Thank you to everyone for your kind thoughts and words. I appreciate all of you very much and if nothing else good can come of a situation like this, I hope that you all take a moment to cherish the love ones in your life and reflect on those who have passed.

And while a girl’s gotta mourn, a girl’s gotta eat, so here’s the food.

I went to a mini vegan potluck this weekend and, of course, forgot to take pictures until after everyone had filled their plates, so these pictures are a little sad, albeit tasty.

pasta
A bean and fresh veggie pasta, tossed with vinigarette. It’s a mixture of black beans, white beans, tomatoes, kalamata olives, cucumbers, zucchini, sweet corn, red bell pepper an red onions. Served with crushed up tortilla chips on top.

vegan dumplings
Chinese-style dumplings with a spicy tofu/mushroom filling. Oh so tasty an a nice treat from standard potluck fare.

broccoli casserole
Cheezy Broccoli Casserole from the Uncheese Cookbook. Or as they say from where I come from, hotdish. Not the greatest picture, but man was this tasty.

vegan scone
Shortcake! Vegan with a Vengeance scones with strawberry/nectarine mixture and Macadamia Nut Cream, also from VwaV. The leftover fruit made a great soy yogurt mix-in for breakfast the next day.

Memorial Day dinner:
grilled vegan goodies
Grilled corn on the cob, zucchini and assorted summer squash, sliced and grilled wrapped in foil with sliced garlic and some salt, pepper and herbs and Field Roast. Can anything grilled not taste great?

dreena's energy cookies
Dreena’s Energy Cookies from Vive la Vegan! I made these as a low sugar treat expecting them to taste “healthy” and was pleasantly surprised that they were very dessert-worthy. They were soft and flavorful and totally satisfied my hankering for something sweet.

vegan waffle sandwich
A field trip to North Portland led us to Flavour Spot, a waffle food cart located in the Video-Rama parking lot on Lombard and Boston. Now, if eating food sold in a video store parking lot isn’t your idea of gourmet, you clearly haven’t tasted this treat. A slightly crispy waffle, filled with veggie sausage and drizzled with a maple glaze, it is a meal worth repeating again and again. Even crab-cake Jim, who is in old man training and doesn’t like driving anywhere out of a 5 mile radius of the house besides to work, was in love and the next day asked if we could go again. Rumor has it (i.e., I read on the internet somewhere) that they also have a vegan Fluffer Nutter waffle sandwich too. I might have to take that mission on personally to confirm or deny such rumors. Remember, I’m doing all for you. :)

Oh Hot Dish. I still make a tater tot hot dish that my ex’s mom( from Shakopee) gave me about 20 years ago.

Oh…those grilled veggies look good! And that waffle looks so yummy! I love the idea of buying food from a parking lot…he he!! I just ordered your book and I can’t wait to get it!!

I am glad to hear you got out to a nice potluck. Everything looks wonderful! Oh I have to try those cookies. Your review makes my mouth water. Oh and the broccoli cheese casserole. Yum!

Actually, driving way out of the way to eat crazy video store food sounds like the perfect idea to me! My husband is also an old-man in training. He always tells me that certain things are “all the way across town” when that means literally a 10-minute drive.

Wow… all that food looks so amazing that I don’t know which I would like the most! But the waffle with the veggie sausage and maple syrup, that’s true comfort food. Maybe I’ll start there! :)

OMG, I had no idea such amazing vegan food was available from a cart anywhere, video store parking lot or otherwise. Will wait to hear your report on the fluffernutter investigation.

Hotdish…hehe. I once brought a veganized version of my mom’s “hamburger hotdish” to a kosher potluck that had some people alarmed. They thought I had mixed meat and dairy, when in fact it contained neither. Fooled them omnis good ;)

yeah, i heard about Flavour Spot and one day i’ll force myself to go out there.
hopefully whoever made the Strawberry Shortcake didn’t follow the biscuit recipe precisely. my friend made it for me for my birthday and the biscuits came out awful b/c there was a missprint regarding the quantity of baking soda. i think. whatever is was it turned out terrible….salty tasting. the strawberries and cream were delicious however…..

Cool- a vegan potluck. The grilled squash and corn sounds great! I’ve been eyeing Dreena’s energy cookies and I’m glad to hear that you liked them. I really like that there’s no sugar in them!

Yes, they have the fluffernutter, and it is gooood. I actually liked it better than the maple sausage, but ours weren’t very maple-y, so maybe we just had a bad one. But I’m getting the fluff again next time.

I LOVE Flavor spot! The best thing is that it’s only a 10 minutes walk from my house! The fluffernutter is good, but the peanut butter and jelly takes me back to childhood.
